Gelatin is a simple protein obtained by the hydrolysis of collagen from animal bones or cartilage cooked in water. It is easily soluble in water, and the resulting solutions tend to thicken into jelly. The degree of solubility is proportional to the temperature of the water. The optimum temperature for dissolving gelatin is from 42 to 60 ° C. It is not desirable to dissolve at a temperature higher than 60 4 ° C - then it loses its properties.

Composition of gelatin:

Although gelatin in dry weight is 98-99% protein, it has a lower nutritional value than many other sources of protein. Gelatin has a particularly high content of the essential amino acids glycine and proline (ie those that the human body can produce itself), while it lacks essential amino acids (ie those that the human body cannot produce itself). It does not contain tryptophan, it is low in isoleucine, threonine and methionine.

Amino acid composition of gelatin

- glycine 21%
- Proline 12%
- hydroxyproline 12%,
- glutamic acid 10%
- alanine 9%,
- arginine 8%
- aspartic acid 6%,
- lysine 4%
- serine 4%
- leucine 3%,
- varin 2%
- phenylalanine 2%
- threonine 2%
- isoleucine 1%
- hydroxylysine 1%
- methionine and histidine <1% and tyrosine <0.5%.

Values vary, especially those with less content, depending on the source of the raw material and the production technology.

Gelatin for healthy bones and joints:

Gelatin strengthens cells and internal fibers. It contains two amino acids - proline and hydroxyproline. They both have a positive effect on connective tissue. Gelatin is also able to stimulate the growth of connective tissue and amazingly restores damaged joints. Gelatin helps reduce and eliminate back pain and stiff neck. It is especially useful for people who spend long hours in front of a computer.

Gelatin is also used as a powerful tool in the treatment of coxarthrosis. In this case, concomitant calcium intake is recommended.

Gelatin intake reduces acute conditions, improves joint mobility and motor activity. Gelatin improves bone metabolism, as well as the reconstruction of worn-out cartilage tissue. Thus, gelatin contributes to improving the quality of life and prevents complex operations for changing joints and placing artificial ones.

Gelatin has a beneficial effect in the following diseases: arthritis, osteoarthritis, vasculitis, gonarthrosis, coxarthrosis, osteoporosis, osteochondrosis, rheumatoid arthritis, scoliosis, bone fractures and sprains, hip dislocations and others.

More useful properties of gelatin:

- Strengthens joints;
- Increases elasticity and strengthens tendons and ligaments.
- Supports the work of the heart;
- Improves metabolism;
- Improves mental abilities;
- Stimulates hair and nail growth;
- Regular use reduces wrinkles and prevents the appearance of new ones;
- Has a beneficial effect in the treatment of dyslasia.

The amino acids contained in gelatin are a source of energy for the body. They strengthen the heart muscle and are useful for mental activity. Gelatin is also recommended for low blood clotting rates. Regular use of gelatin is also recommended for gastric, pulmonary and intestinal bleeding.
